We only buy in large amounts from reliable farmers and millers. We grade our coffees into different sizes and quality levels, discarding the lower-quality beans, then blind tasting our grades and types to determine the ideal roasting temperature for each size and type of coffee bean – different roasting temps for different coffee. This is something we perform on a regular basis to ensure a consistent and high-quality roast every time.
